Joan: depends on the app. Some add arrow keys and other niceties to the virtual keyboard. The standard virtual keyboard doesn't have them, though.

Tom. Use Spotlight on the iPad for locating apps. It's the screen to the left of the first home screen. It will find your apps. If you have an iPad 3 or 4 or iPad mini, you can also launch apps with Siri: "Open the Evernote app" for example.

I haven't tried in iTunes 11, but I like to search in iTunes on my computer. That way, you can find out which "folder". Connect your iPad, select it, look in the Apps pane. There's a search field there.
